β-galactosidase" A Novel Enzyme For Treating Dairy Waste "An Environment Friendly Approach": A Review

Abstract
This review paper investigates the various aspects of ?-galactosidase enzyme such classification, properties, isolation, production and assay. The paper highly relies on catalytic activity of enzyme to hydrolyze lactose to glucose and galactose. This enzyme is industrially important because it can be used to avoid lactose crystallization in sweetened, condensed and frozen dairy products such as ice cream and condensed milk and solve problems associated with whey utilization and disposal. The review focuses on the industrial applications of enzyme to food science as well as in the treatment of waste discarded from dairy industry.
